I just thought we could start sharing some great recipes with each other. They don't have to be fancy at all. I mean...I can put up how to make the egg sandwiches that Marlie and Chris go nuts for if I decide to.
I started thinking of doing this because yesterday Chris found a great recipe that my mom used to use and I thought I'd put it up here to share the love.
Aquarius Hot Dogs
10 wieners 1/3 cup finely crushed small pretzels 1 ? cup grated sharp cheddar cheese 3 tablespoons drained sweet pickle relish 1 tablespoon mustard
Split wieners lengthwise, not cutting through completely. Combine the crushed pretzels, cheese and pickle relish in a bowl. Mix thoroughly. Spread each split wiener with mustard. Place 2 heaping tablespoons of cheese filling on each wiener. Place 5 to 6 inches from full flame of gas broiler; broil 3 minutes. Makes 10 hot dogs.

Great topic. Keeping it on the simple side, here's one my mother made while I was growing up and I believe I've successfully passed it on.
Hamburger on Toast
Slice bread in toaster (however many you want) Spread raw hamburger on top of the toast Place toast on baking sheet (I also cut the toast in half for easier cooking) Bake in a 350 oven about 20-25 minutes, depending on your taste
Very easy to make and there are many things you can do. RichN likes his with a slice of cheese melted on top. You can add onions to the raw hambuger. You can top with a slice of tomato. Whatever. Our tradition was to squeeze a ketchup smilie face on the top.
Thought maybe some of the single guys and busy people would like this.

Do you need to spray the baking sheet with anything to prevent the bread from sticking?
I don't really have any recipes (other than the meatloaf my mom makes, but that's from the back of the Quaker Oat can, so I don't know if it counts), but one thing I did a few weeks ago was make chili macaroni, not from Hamburger Helper. I made macaroni and cheese like normal and then dumped a can of chili in it and mixed it up. It's aight and is quick to make in a pinch.

I can't really have any red meat at the moment, but I'm all crazy for chicken strips in salads lately.  I eventually will get into the hamburger on toast. hehehe. The idea for the chili mac sounds like a good idea and meatloaf from your mom's quaker oats box is completely allowed.  I make meatloaf the old fashioned way....by buying the Meal in a Bag stuff. elmono loves it. I have to make two loaves of it because he eats one all by himself.

The meatloaf my mom makes is more old fashioned, methinks  It's totally from scratch. I've got the recipe written down somewhere, but basically, you combine the ground beef, an egg, some salt, one of those little cans of tomato paste or whatever, and some oatmeal and mix it all up. Very good. And my mom makes two of them, as well. We eat most of one at dinner itself and the other is used for meatloaf sandwiches the next day. Mmm meatloaf sandwich.

Really? Do you like burgers, though? rolando, you should look into the things you like on burgers and then just make your own meatloaf. You never know, if you only put stuff you love in it, you might like it and you'd have a recipe.

- Take frozen pizza out of package. - Put on tray. - Put tray in oven. - Cook for ~ 15 minutes.
I'd write out the other recipe I use, but it's a little more complicated as it involves putting noodles in boiling water.

Mom's Quick Chicken Soup -------------------------------------------------------------------------------- 4 servings 1 tbsp olive oil 1 c diced onion coarse-grained salt and cracked black pepper 6 to 8 c canned chicken broth one 10 to 12 oz boneless, skinless chicken breast 3 c sliced carrots (about 4 medium) 1 c orzo pasta or anyother small pasta or noodle 1 to 2 cups peas (frozen are fine) 1/2 c loosley packed, roughly chopped flat leaf parsley In a medium soup pot, heat olive oil over med-high heat. Add onion and stir evenly until coated with oil. Season with salt and pepper. Cover, reduce heat to med-low, and cook, stirring occasionally, until translucent, about 15 min. Add a splash of chicken broth or a teaspoon of water to pot if onions start to burn. When onion has completely softened, add chicken broth, chicken breast (left whole) and carrots to pot. Cook uncovered for 10 minutes, or until chicken breast is cooked through. Remove chicken breast and shred when cool. Add orzo to soup and cook 10 minutes, until al dente, then add peas. Cook another 5 minutes. Return chicken to pot, alsong with parsley. Taste and correct seasonings. Cook one minute more. Serve immediately. Thank you to Antonette for the recipe

Irish Coffee: -------------------------------------------------------------------------------- 1 1/2 oz Irish Whiskey 1 tbsp brown sugar 2 oz heavy cream coffee float green creme de menthe Fill glass with hot water to pre-heat then empty. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add 1 tablespoon brown sugar and stir until completely dissolved. Blend in Irish Whiskey. Gently top with a collar of slightly whipped heavy cream by pouring gently over a spoon. Color with cremem de menthe and enjoy while piping hot. Thank you, Ruby!

Cheesy Broccoli Casserole
--------------------------------------------------------------------------------
INGREDIENTS:
1 (10.75 ounce) can condensed cream of mushroom soup 1 cup mayonnaise 1 egg, beaten 1/4 cup minced onion (optional) 3 (10 ounce) packages frozen chopped broccoli 1 small jar chopped pimento 8 ounces shredded sharp Cheddar cheese salt & pepper to taste 2 pinches paprika
DIRECTIONS:
Preheat oven to 350 degrees. Butter a 13x9x2 inch baking dish. In a medium mixing bowl, whisk together condensed soup, mayonnaise, beaten egg, and, if desired, chopped onion. Place frozen broccoli in a very large mixing bowl and break up the pieces. Pour soup-mayonnaise mixture on top of broccoli and mix well. Add pimento and cheese, mix well. Pour mixture into prepared baking dish and smooth top of casserole using a spatula. Sprinkle lightly with paprika plus salt & pepper if desired. Bake at 350 degrees for 45 minutes to 1 hour. Serve hot.

RECIPE: FRUIT TARTS
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ *~*
INGREDIENTS: 1 cup Bisquick original baking mix. 2 tablespoons sugar 1 tablespoon stick margarine or butter, softened 2 3-ounce packages cream cheese, softened 1/4 cup sugar 1/4 cup sour cream 1 1.2 cup assorted fruit slices or berries 1/3 cup apple or apricot jelly, melted
DIRECTIONS: Heat oven to 375 degrees. Mix baking mix, 2 tablespoons sugar, the margarine and 1 package cream cheese in small bowl until dough forms a ball. Divide into 6 parts. Press each part dough on bottom and up 3/4 inch sides of 6 tart pans, 4 1/4x1 inch or 10 custard cups. Place on cookie sheet. Bake 10-12 minutes or until light brown; cool on wire rack. Remove tart shells from pans. Beat remaining package cream cheese, 1/4 cup sugar and sour cream until smooth. Spoon into tart shells, spreading over bottoms. Top each with about 1/4 cup fruit. Brush with jelly.

chicken-rice-taco
2 lbs boneless, skinless chicken breast 1 package taco seasoning mix 1 can chicken broth 1 8 oz. bag shredded cheese (mexican mix, preferrably) ~3 cups instant rice 1 can tomato sauce 1 bag tortilla chips OPTIONAL: diced green &/or yellow pepper OPTIONAL: substitute 1 8 oz can tomato paste & 1 can corn, undrained instead of the 1 can tomato sauce OPTIONAL: flour tortilla or taco shell instead of tortilla chips
cut chicken into bite sized pieces, toss into pot & cook on high (stirring continually) until meat is COMPLETELY cooked. add taco seasoning, chicken broth, & tomato sauce (or substitution). bring to near boil, add rice & stir constantly until most (but not all) of liquid is absorbed...reduce heat to medium if necessary (also add peppers here, if applicable). bring to near boil again, then remove from heat & add cheese, stirring it in nicely.
serve on tortilla shell, taco shell, or simply scoop it up with tortilla chips.
feeds ~6-8
