2) Super Mario Kart - SNES
3) Counter-Strike - PC

This is a hard one

The Legend of Zelda: Ocarina of Time totally immersed me

GoldenEye kept me occupied for months

Knights of the Old Republic was engaging (I just installed KOTOR II)

Right now I'd say those three although it's hard to narrow it down
